RICOTTA MORTADELLA & PISTACHIO TOAST
INGREDIENTS:
- Grande Cheese Ricotta, whipped in a food processor
- Sourdough loaf, sliced and toasted
- Finely sliced San Daniele mortadella
- Green olive pesto (see below)
- Chopped pistachios, for garnish
- Fresh parsley, chopped
GREEN OLIVE PESTO:
This quick pesto brings brightness, brine, and a bit of heat.
- 2 tbsp pesto (store-bought or homemade)

2 heaping tbsp sliced green olives, finely chopped

1–2 tsp olive brine (from your olive jar)

1 tsp chili flakes

2 tsp extra virgin olive oil

Salt, to taste
Mix all ingredients together in a small bowl. Adjust seasoning as needed.
DIRECTIONS:
- Whip the Grande Cheese Ricotta in a food processor until smooth and creamy. Transfer to a piping bag (or use a spoon for a rustic spread).
- Toast the sourdough slices until golden.
- Pipe or spread the whipped ricotta generously over each toast.
- Layer with thin slices of mortadella.

- Sprinkle with chopped pistachios and fresh parsley.
